A few months ago Bret was watching Throwdown with Bobby Flay and saw the coconut cake at the Peninsula Grill. Ever since then he has wanted to try a real coconut cake. We looked on the Peninsula Grill's website (www.peninsulagrill.com/coconut.asp) to see how much one of these cakes would set us back. The cake is $100 and costs $105 to ship it to Utah. Spending $205 on a cake is not something we are willing to do so it looked like Bret was going to have to live without trying a coconut cake. Bret started looking around to see if there was anywhere in Salt Lake that we could get one and had no luck. Then Bret found a recipe that looked good enough to try (www.foodnetwork.com/recipes/alton-brown/coconut-cake-with-7-minute-frosting-recipe/index.html). We are going to dinner with Bret's family for his birthday tonight so it seemed like the time to try and make the cake. So we have spent at least 4 hours making this cake. We even made the coconut extract, coconut cream, and coconut milk from scratch. It is only a 4 layer cake (the one that the Peninsula Grill sells is a 6 layer cake) but I think it looks good. For all the time and effort this took I am hoping that this is the best cake I have ever tasted!

i hope there are leftovers and i get some. i love coconut and trav doesn't so i hardly ever get yummy coconut treats! that is the most incredible cake i have ever seen--way to go shannon--i think you must love randy bret
